Ingredients
500g grated carrots
1 liter full-fat milk
1 cup sugar (adjust to taste)
4-5 tbsp ghee (clarified butter)
1/4 cup chopped nuts (almonds, cashews, pistachios)
Pour in milk, simmer until it reduces by half, stirring occasionally.
Add sugar, continue cooking until carrots are fully cooked and mixture thickens.
Stir in cardamom powder, saffron (if using), and chopped nuts. Cook for a few more minutes.
Garnish with raisins. Serve warm or chilled, as desired.
